meggy's minestrone

here's a recipe that i've adapted a bit from a new cookbook (Market Vegetarian). next time i make it, i'll take pics. don't forget crusty bread for dipping....and a glass of red wine or two
2 garlic cloves, chopped
1 yellow onion, chopped
4 oz green beans, (big handful) cut into thirds
3 oz whole wheat spaghetti, (medium handful) broken into thirds
can of garbanzo beans, (or a little less than a can) rinsed
6 roma tomatoes, quartered
6 cups vegetable stock (low sodium if you can find it)
s&p to taste
grated parmesan for topping
heat 2 tbls olive oil in a large pot. add onion, stir often for 5 mins
add garlic, cook 1 min, stir often
add stock, tomatoes, garbanzos, green beans, spaghetti, s&p
bring to a boil
reduce heat, let simmer for 45 mins, stirring often
yay! that's the first recipe i think i've ever written out :)
